Is there a way to section each part of an assembly at different planes? I have a customer thats wants to see this. Thank you.

You could create Separate configs with a Cut-out section of the file for each part (Cut-extrude feature). The problem with that is if you used faces to mate with, you will get errors throughout the assembly. Another reason to use planes for mating - faq559-871.

Thanks Scott, but we don't want to do any extrude cuts in the assy. Just want to show section views and print them in color for our customer. I'll try it in a drawing and see if it's what they want.
 
I didn't say make any cuts in the assembly, I said make them in the parts and make it in a new configuration.

You might also look into the Feature scope. If you go to the help and type in Scope under the index tab it will give you some info there. This can be used in the assemblies.

But from your intial post it sounds like you want all the parts to have it's own individual section. If that's the case then I would still stand next to my intial post to use configurations of your parts and use cut features.
