Please help me understand when a Separator is used and when a Stripper is used in refinery. My understanding is both have similar operations.

Nope. A separator usually means a single stage flash occurs and you have 1 feed and two outlets, a liquid phase and a gas phase.

A stripper means multiple stages with a feed stream, a stripping medium feed, a gas outlet, and a liquid outlet.
