As a long-time user I've tried SMath, but can't figure out if calculations can be more than one page an if so, do variable definitions carry over to subsequent pages?

Sorry, your question's not making sense. The program doesn't really care about pages; that's merely an artifact for printing. As far as the mat engine is concerned everything is on the same page

The program automatically paginates and shows you the page breaks. Just scroll down and keep typing, it'll create new pages as needed.

"Great. The question is how?" Just click at the bottom and use your up and down arrows to move the little red "+" to the next page. Often my sheets will have half a dozen pages or more.
