We need grating to cross span 8', but the contractor only makes 3'x4' grating, so we'll need to put(2)w10x12 splice below. w10x12 splice beams are at each side. w10x12 will have to take all the middle span moment, welding between the grating and w10 will make them composite beyond middle splice. However I am only able to put beams each side of the grating, and weld only one side of the beam to the grating at side edge.

If you have a w10x12 under the junction, you don't need a moment connection. If this is not what you mean, we need a diagram.

Obviously, the two side beams and the center beam have to carry their respective loading, whatever that might be. Weld a 1/4" x 3/4 or 1" bar to the top of the center beam, right down the center, over the web, as a retainer bar, standing 1" high. Do something similar on the tops of the two side beams, so that you keep the grating pieces captive.
