How can I split a surface so that different parts can be selected independantly?

Ex:
I have a cylinder that I want one half to be one color and the other half to be another color. How to split the cylindrical surface?

Thanks

In 2001 is Surface->Trim->Use Quilt. Should be similar in WF2 and keep both sides.
