What do the terms "ferritic", "austenitic" and "martensitic" mean in conjunction with stainless or other steels?

Rather than try to explain in detail the various types of stainless steel, the web site below titled "Key to Steel" contains various technical articles that are well written and should provide you with the necessary information;


I would encourage you to review other pertinent articles on this web site.
 
Also, nearly every materials science book, and most corrosion texts have a section on stainless steels with an overall description.
