All the part files I created are Under Defined because when I assemble the parts, I see a (-) symbol next to the part which indicates the parts are under defined. How do I fully define those parts? add more dimensions?

please help. Thank You.

No, add more mates. (-) in an assembly means that the part has not been constrained in all its degrees of freedom and can still be moved. Drag it around and see how it can still move, then add the appropriate mate to constrain it fully.

If you are mating cylindrical parts in your assembly you really don't need to constrain all the DoFs, unless rotational features are there. Usually just a concentric and another mate (coincident or distance) will suffice.
