Does anyone have any guidelines on high of a parapet you can have with a 7 1/4" and 9 1/4" tilt wall? Also what would the deflection criteria be?

As high as you want as long as the panel can take it.

I would limit deflection to cantilever/150 (dont forget to include the effect of the backspan).

Also this has a multiplying effect on the lateral forces at roof level, make sure that this is accounted for in the design of your steel supports and the lateral bracing.
