I think you should go with something realistic, to simulate optimal the effect of the joints between panels, if they are open.
for usual panel sizes, you may use ISR technical approvals if any, for stone panels, or cstb (French) approvals,
for e.g. wind tables that show usual panel sizes.
If the joints are closed with some kind of aluminium profile, then I do not think that the panel size is critical.
