i5-5200U with Nvidia 840M VS. i7-5500U with Intel HD Graphics 5500?

For Siemens NX, should I prioritize graphical or processing capabilities?

Depends on what you would like to do with NX...

If you want do perform heavy FEM calculations I would go for more processor capacity, otherwise graphical...

Do not use the Intel integrated graphics as it will slow you down and is not certified. Go with any Nvidia chip/board so it is doing the OpenGL processing.
Fastest processor you can justify.
256GB Solid State Drive for your primary drive, unless using this as a standalone laptop, then maybe 512GB
512GB-1TB hd for storage

If you will be using the manufacturing module you will need a decent processor and graphics.
