Why RST and What does RST stand for?

If in Europe, those letters were used to name the three phases in a three-phase system. We now use L1, L2 and L3 (mostly).

The corresponding terminals in a three-phase motor are U, V and W.

Yes, I asked RST at 3 phase system.

RST and L1/L2/L3 also U V W in motor, it is just a letter or have any means?

Like alfa, beta, gamma. It came from first letter of Yunani's alphabet.
Like x, y and z. It came from last letter of alphabet.
 
No more meaning than A, B, C have in the US.
Not at all like RGB or CMYK for colour signals.

It depends on the application. Some utilities have residential subsurface transformers. These RSTs are installed in vaults below ground level.

Seriously though, it's not an acronym or abbreviations if that's what you mean, but I do believe that it is slightly relevant that the selection of letters was such that R comes before S which comes before T, because the standards for installation require connection as such. Doesn't matter which one you start with at the generator that you label as R, but the next one that is 120 degrees out clockwise is S, followed by T, and it must remain the same throughout the system from that point on.
