Which version should be use for long time work Catia v5R21 or V5R28/2018?

Hello eng-tips user..
I am a beginner user of Catia and facing a silly issue.
Most experienced user is showing their project on YouTube v5r20 or 21... Why?
Is there any issues, work with V5R28/2018? Is it stable to for a long time use?
Can anyone have experience with both versions? Like features or other things?

Because those videos are old and complex CAD software is usually used in long-term projects that persist same version across it's timespan.

It'd be crazy to use out-of-date R21 version with terminated support.

I'm working in several different releases because our suppliers and vendors use different versions.
My main is V5R29 and some vendors use R30, 31 and one uses the latest R32. We're transferring data across companies so compatibility is a must.
I don't like switching between versions because it's slow. I'd suggest you start with R31 at least if there's no hindrance from vendor/supplier side.
I'm having issues because we use Y14.5-2018 but R29 which don't have many drawing symbols in acc. to Y14.5. R31 have those so if you want the most for the money go R31.
