In my firm 304 ss wires(about 330 micron thickness) is annealed before grinding. What is the metallurgical story of annealing before grinding?(annealing is made at 650 C)

the title is wrong, sorry. it must be "why do we make annealing before grinding?

What features are you grinding? My guess is that it is for dimensional control. The annealing will result in some distortion. If you anneal first you will get better dimensional control.
Though the material would grind better (cleaner, better finish) if you ground it when it was harder.

Neither should your protection

How much pressure does the grinding machine put on the wire?
Perhaps there is a squeezing force during grinding that results in a small extrusion and the annealing is performed to avoid chevroning or surface cracks.
