Read these Wikipedia articles:

includes a plant photograph, a process flow schematic and thorough description

includes a process flow schematic of processing at the well heads and a thorough description

includes a photograph, a process flow diagram of a typical complex refinery, process description, product list, environmental impacts and much more

includes a photograph, many schematics and a very thorough explanation of how large, industrial distillation towers work

includes a process flow diagram of one of the key process units in an oil refinery along with a process description and how the chemistry works to produce a high-octane gasoline component

and many, many others in the chemical engineering category at

Hydrocarbon Processing Magazine has a section I believe once per year that has gas plant and gas treating processes. There are simple flow sheets and some estimated energy and constructions cost data. They also do refinery processes and petrochem processes too.
