Does anyone know of a table that lists a Psi to temperature between -50 to -140 degrees Celsius? I am testing the function of electrical windings in a vacuum tube.

do you mean P/T = constant (for an ideal gas) For air humidity will factor in, but then if you cool air down, the humidity falls (as the water condenses out). There are tables for "standard" atmosphere.
But if you're looking inside a vacuum tube, then what does the question mean ? (how does the "pressure" of a vacuum change with temperature ?)

If you're in the territory (and it's likely that you are) where you can no longer use the ideal gas laws, then you need to find out what the gas that's left in the tube is, then search out the specific properties of that.

If there's any sort of gettering involved, the composition of the residual gas may not match what was in the tube before the vacuum was drawn.
