Looks like Ultra-high temp heads should be used above the access doors. +50F above maximum oven temp setting as per A.8.15.12 below.
Care should be taken when determining the maximum ceiling temperature. Should be measured as Mr. Willis has said.

Also you need to specify the type of water supply.
If there is positive pressure at the fire pump suction
you will normally use a centrifugal pump, either:
- horizontal split case
or
-vertical inline.
If you are lifting water from a pit or a pond you will need a turbine pump.
Usually the municipal water supply is sufficient to flush the system.
NFPA#13 asks for 10 feet/second water velocity in underground piping.
Fire pumps are normally tested at full flow annually, doesn't really matter where the water goes..
