Can someone give the reasoning behind the seemingly arbitrary 450C/842F point of definition regarding Brazing and Soldering?

The difference is primarily related to the melting temperature of the filler metal. Brazing uses filler metals that melt above 450 deg C whereas, soldering uses filler metals that melt below this temperature.

Both processes do not result in the melting of base metals.
