Anchoring to old dry set stone masonry

I have a residential dry set stone masonry wall with rough cut floor joists embedded in the wall. Typical historic construction. The owner is wanting to reconfigure openings which may require adding/removing floor joists. Does anyone have any references or ideas how to approach re-anchoring new floor joists to these old dry set stone walls?

Are you sure they are dry set? That is not typical construction; lime mortar in the walls is typical but it could have been leached away, giving the appearance of dry set. Removing joists is obviously easy, installing new is not so straightforward. Without a lot more details, it's hard to offer constructive advice because there are a number of solutions but they don't work in every situation.
