best stainless for hight temp cooking, open fire 1

Thanks all for your assistance. I am building a plate holder for my outdoor cooker which can at times break the 1000 degree temperature level and need to know what stainless to use. is 304 and 18-8 OK for the operation. T

I like to use 321 for elevated temp. apps when it is usable. MMPDS says that it is usable in the 800-1600°F range
 
I have made and been party of the first part to the manufacture of numerous fish cookers, grills, grill tops, complete BBQ grills, etc, and nearly all were made with 316 or 310 SS. I have never received a complaint.

I've seen a lot of others made with 304 without apparent problems.
 
IF you can get 309 or 310 use it by all mean.
Most likely you will be using 304.
It should work fine. Just two tips.
Don't over clean it. The discolored surface is fine.
But at the same time don't leave cooking resuidues on it. There are a lot of chlorides in food and you can get a lot of pitting. Just wash the soft stuff off and leave the heat tint.

Corrosion never sleeps, but it can be managed.
 
In your case I think we have to say, stay with the simple stuff. 304 isn't the best, but you'll go crazy trying to find any of the VERY BEST alloy. Service centers don't sell all these grades.
That is one heck of a plate holder if it works at 1000F. Don't use plastic plates.
