Is there a way to set up a parameter in the BOM to put certian parts in order and also to show the weight?

You could export Bom to excel and use the sort feature. First you should create 2 parameters in the property page -- product tab. Define other properties. Create an integer parameter. End user increments number to affect desired order. This will allow the sort in Excel. Create a mass parameter and define a formula to use smart volume of partbody * density of material.
When you export BOM - add these 2 new columns.
