THE best book that i know about is the "HEAT TREATER'S GUIDE Standard Practices and Procedures for Steel", Copyright by ASM. I have this one, but there is also one that exists for non-ferrous materials (Al). In there, there is heat treatment procedures for Carbon steels, Alloy steels, Tool Steels, Stainless Steels, and so on. For each grade you have normalizing, stress relieving, annealing, hardening, tempering, etc.
Good luck!

The following are links to the books mentioned by ijzer and COKA. They are excellent references:

Heat Treater's Guide: Practices and Procedures for Nonferrous Alloys

Heat Treater's Guide: Practices and Procedures for Irons and Steels, 2nd Edition

ASM Handbook Volume 04: Heat Treating
