Hi all I am designing brewery that has open fermenters and 1200 lbs/day CO2 produces. This room is 10,000 cuft. The number I came up with 2,500 cfm exhaust and supply with VFD controlled blowers and modulating ignition make up air unit.
I was wondering if there is any written documents by ASHRAE rate for brewery ventilation and would you recommend cooling also for make up air unit?

First things first, where is this brewery and what are the climate conditions.

If you want a good answer, there must be good data.
 
How did you calculate the 2500 cfm exhaust rate
 
We are in Chicago our winter design temperature is -10. I count as 5cfm for 1 kg CO2 to keep it at 1000 ppm
 
Where did you find 5 cfm for 1 kg CO2 to remain at 1000 ppm? I have seen the CO background run 600 ppm. Will this design be permitted in Chicago or use subburbs? FYI Chicago code had/has a bewery use of space. What is area of space?
