We need to install light fixtures in an area expected to be submerged for approximately two weeks each year. We have chosen fixtures rated for both IP66 and IP68.
Would standard XLPE, armored cables be sufficient for this application, or should we consider specialized cables for these conditions?

IP 66 is protection from (high pressure) water jet. IP 68 is protection from (continuous) immersion in depths above 1 m ... although typically limited to a max of 3 m. If you need to operate successfully at more than 3m depth - be sure to specify HOW DEEP and have the devices tested accordingly.

For cables, look at stuff specifically designed for submersion (submersible pump cable, for example). Most will have an "AD8" protection designation. And be sure any terminations/splices you make are either waterproofed correctly (at the underwater fixture for example) or are going to remain above the water level in all instances.
