Changing viscosity of water

What is the best way to control the viscosity of water.

I only want to change it a small amount, as I am using water to simulate some of the properties of milk.

I am planning on doing a sensitivity type study using a range of viscosities to determine the effect.

The additive to control viscosity would be required to be non foaming, as the process involves two phase flow, and also able to be used in food grade applications.

Anyones help would be much appreciated

You can add some water soluble polymers, such as:
starch
PVA (poly vinyl alcohol)
(both food grades are available)
If you need, I write some other of these polymers.
 
Milk contains fats and proteins I think. You can add polymers to thicken the product. Y ou could also try homogenising oil with surfactant- speak to some of the major surfactant suppliers for suggestions. It depends how closely you want to match the properties of milk, but you may need to adjust the oil / surfactant / polymer properties to get a good match to the viscosity characteristics of milk.I presume you have access to something like a ohlin rheometer.
