My cell phone (Google Pixel 5) charges via USB-C charger with an output of 5v, 3a. Will it harm the battery to charge it from a USB-C Macbook Pro charger with an output of 5.2v, 3a?

The USB standard is 5V ± 5%, so Apple's 5.2V is within the standard and therefore, your cell phone should be able to tolerate it; the main benefit of the higher voltage is the ability to drive longer, or higher resistance, charging cables.
