Convection oven operation/philosophy

Can anyone explain to working of an industrial convection oven/steamer.

What possible causes attribute to a safety thermal switch operating. Product Elamo B10-11, could a defective water inlet solenoid cause the thermal switch to operate due to stagnant heat not being circulated hence heat build up/creation - trip point being exceeded.

Or maybe bad blower.

I've seen thermal fuses misoperate. Just got old.
 
Switch operates on temp detection above set point, opening circuit. Fan motor operational, seems extremely hot within oven on switch activation. Any ideas......! Switch recently replaced, few months ago.
 
A few applicances have more than one heater in parallel. If one should fail the other will still heat, but not get as hot as one would expect.

I don't have a schematic to trouble shoot, but just making gusses.
