We need to verify the Fy Yield Strength/Stress of an old steel roof beam, may I ask where do we typically and safely can take the coupon for the test? Flange? Web? Near support? Away of support?
How much we need to take?
Any code provisions?


And secondly what companies do the test for us? In U.S.

Take it from the areas of least stress. For a typical pin-pin beam with a UDL it would be flanges near supports or web at middle of beam.
 
I agree with jayrod.

When I've done this with simple span beams you take the sample from the bottom flange of the end of the beam.
 
would a hardness test be sufficient ?

How much is enough for a coupon? Size?
What are the allowed methods to take the coupon? Torch cut?

Does ASTM has any words on that? AISC says anything?

You'd need to remove it in such a way that you didn't alter the metallurgy- so torch-cutting too close to the test sample would be out.
Find your lab and ask them how big/small they need, what length, etc.
