Face creation

If I create an "overslab" or "slab" of surface, how do I designate which area of the surface is to be used for milling? To trim the surface to the patch for milling could change the characteristics
to such a degree that the construction of a "face" or whatever would be the way to go. How do I achieve this in V5?

In V5 you can define the maching area or select the limiting contour.
