Has anyone had success trying to model a weldment (as an assembly) inserting an assembly feature of a fillet weld. Then running simulation to look at the results including the stress in the welds. Is this even possible.

yes, it works. The feature in solidworks inserts a fillet bead as a separate part. You then need to mate it appropriately and apply bonding etc for contacts.

however, there is another connection avaliable in simulation known as 'edge weld' and 'spot weld'. i do not yet know how these work.

Not anymore, they've removed this in SolidWorks 2012. You only get a callout but it no longer models the weld bead.
