How does a "full blocking" type thermostat differ from a traditional thermostat found in an engine's cooling system?

A conventional automotive thermostat has a small bypass hole with a little jiggly thing in it. I think this is designed to get hot water to the capsule.

I'd guess that a full blocking thermostat doesn't have one. Where do you find these things? Cheers
