Gasket thickness

In high pressure water system , the gasket is specified with 2mm thick, compressed inorganic fiber with nitrile binder, rated to 700 deg F and 1000 psi.This gasket will be used for raised face flanges.If it's proposed to use 3mm thick gasket instead of 2mm, Is it Ok? can this small change of gasket thickness cause a leakage from both flanges ?

I personally wouldn't recommend this.

I see some problems with this application, mainly the use of a gasket with a nitrile rubber binder at your operating conditions 1000 psig @ 700°F.

What is the class and size of your flanges?
 
All flanges at the suction side "low pressure zones" will be of class 150, the flanges at the discharge side will be of class 300 with sizes 200mm,300mm,400mm, and 500mm, some flanges will be of class 600 with sizes 400mm,150mm,125mm. The maximum pressure rate is 50 bar
 
For pressure classes 300# and higher the best choice are spiral wound gaskets
 
I agree. I would expect the Nitrile binder to burn up quickly. A spiral wound gasket with a high temperature filler would be a better choice.
