Please let me know how to select the gasket from ASME VIII-I Appen-2 table for flange design?

Read table.
Know information about flange size, spec, fluid type + pressure + flow + temperature + safety and specifications requirements.
Apply knowledge.

There is one lube oil Cooler (S&T Heat Exchanger AES type).

Design Pr. Shell side 10.55 and Tube side 10.55
Design Temp. shell side 149 deg C and Tube side 75 deg C
Fluid Shell side is Lube oil and Tube side is cooling water.
shell ID 489 mm
Tube length is 3658 mm.

I think these informations are sufficient to help my question.
