How the closure of the insulation is manufactured 2

Hello engineers,
I'm new here in the community and I would like your help.
I work in a company that manufactures tanks for wine, alcohol, beer, etc. "without pressure" in stainless steel. In some cases, like fermentation tanks, I need to add partial tank insulation. Normally, the klopper top does not isolate. My question concerns how the closure of the insulation is manufactured. Currently, I use a disc, with the differences in diameters, and perform line-by-line welding. But, I noticed that some manufacturers "fold" the outer plate and weld it on the klopper top. Here are some images to make it clearer.

Both are acceptable as long as the insulation is performing. Both are very good designs to me. I have seen much worse insulations than these two.
