Not sure you can really "calculate" it as too many variables. Plenty of testing can be done...

What is wrong with the standard "slump test" ?

Slump test is static. Bingham fluids change their "effective viscosity" with velocity.

Einstein gave the same test to students every year. When asked why he would do something like that, "Because the answers had changed."

It's not clear to me, what you want to "calculate". I've some experience with Viscometer, in particular Brookfield; I would suggest contacting Brookfield representative in your region, they may have experience with your product or may be able to perform some tests.
BTW what is the scope of your study? this will help us for a better support.
