Is there a way to calculate the residual stress in Abaqus?

Sure, you can load the model simulating the process that leads to residual stresses and then unload it to see these stresses remain. You can find some examples of metal forming analyses.

For example, I have a structure "elastoplastic" and I applied some loads and I submit the job in the post-processing at the end of the step (the load is zero) so what Abaqus Visualize is the residual stress or the total stress?

You can create additional unloading step after the one with loading. Then the stress at the end of this unloading step will be residual stress.

I perform a cyclic loading and at the end of the step the load equal to zero so the result would be the same as we create a new step?

Yes, with properly defined amplitude you can get the same results as with additional unloading step.
