how to set the colour of a part...

Hi,
this is most likely a very easy question to answer but how do I change the colour of a part in the model space whilst in rendering mode shaded or is this something you can only do in the assembly space...?

The answer depends on exactly what you mean by 'rendering mode'. If you are using a simple shaded mode, then go to Edit -> Object Display; if it is a studio shaded or high quality shaded operation (HQ is really only used to output a static render for a presentation or frame for an animation), then you will have to apply a material to the body to change its appearance.
 
And don't confuse the settings under...

Tools -> Materials -> Assign Materials...

...with what cowski was talking about. To find the place where making a 'material' assignment will actually change how a model is rendered, you will need to go to...

View -> Visualization -> Materials/Textures...
