What is the best way to estimate latent load in room with 6 dryers? 10 washers? apt bldg.

depends on what conditions you need/want to have in there.

All the air being exhausted by dryers, comes in from somewhere. either from adjacent conditioned spaces, or outside. If from adjacent space, that adds a load to that space since it will draw air from outside. With estimated dryer runtimeyou shoudl be able to easily calculate.

but if you draw from adjacent conditioned spaces, you may not need to do anything since that is all dry air coming into the dryer room.

If you are drawing from adjacent conditioned spaces, treat each dryer as if it were an exhaust fan , and review your incoming air accordingly.
