Hello,

I've recently been hired as a facilities engineer and new to commercial hydronic heating. Would anyone know of any texts/white papers/case studies/etc. discussing hydronic systems & controls, build concepts, and maintenance schedules? Also, any case studies converting a building from hydronic to electric heating would be useful as well. Thanks in advance!

Bell & Gossett has a huge amount of literature on hydronic design and installation. Link It would be a good place to start.

If you have further interest in hydronic heating, Bell and Gossett's "Little Red Schoolhouse" will be helpful
 
I would find out what equipment is in use at your facility, especially the ones there are a lot of, and then read the installation operation and maintenance manuals. They will likely tell what all the regular maintenance items, and hopefully the frequency. They might be a little overkill but a good start.
