I need find a book that detail or show a drawing of the element in every kind of joist

for example a drawing of the 10K1 or the 28K9 (the top chord and the bottom chord)

I don't know of such an animal. The components and their assembly can vary from Supplier to Supplier. A 10K1 from one supplier may not be the same as another supplier.
 
What Ron said. The joist designations themselves are just for "generic" joists, with the actual designs done by the supplier. That's why we get shop drawings to review for each project. You could have rod web, crimped web, or angle web joists, different grades of material for the flanges,...all sorts of variables.

What's the application of the information you're looking for? Maybe one of your local suppliers could give you some general guidelines (e.g. we always use L4x4x3/8 as the smallest flange members for LH-series joists....), but it wouldn't apply to another manufacturer.

I believe that Revit has generic steel joist families if you're just looking to show them in a structural drawing schematically.
