What are the types of LNG production process and how to evaluate which is the best to deploy ?
Why do companies get to patent and license LNG production process ?

Example.
Black & Veatch developed the PRICO®
ConocoPhillips Optimized Cascade® LNG Process
Lummus Technology
C3-MR process
MFC®1 process (patented as LIPROM)

I am assuming that you are only referring to the methane liquefaction process exclusively.
You have listed two of the most dominant processes, CoP Optimized Cascade and APCI C3-MR.
The selection involves a financial studies and technical studies that consider equipment quantities, sizes, energy efficiency, production output, operability, etc. After you have gather all the information, a comparison matrix is established and each process gets a simplified dollar value representing the amounts of dollars needed to produce a ton of LNG.

The patent is like any other patent such as the patent that Apple has on their iPhones or Google on their search algorithm. These companies believe that their intellectual property is worth protecting and will help them win projects.

On that table I don't see the LNG projects in Australia.
I know of the following:
Gorgon LNG
Wheatstone LNG
Gladstone LNG (GLNG)
Asia Pacific LNG (APLNG)
Queensland Curtis LNG (QCLNG)
Itchthys LNG
Pluto LNG
Darwin LNG
And of course Prelude FLNG
