Has anyone ever added a greater than/equal to symbol using model text?

Try using the Windows font named 'Symbol'.

In order to help you actually find and then Copy & Paste the proper 'character' into NX, I recommend that you use the Windows utility called 'Character Map' (at least that's what they call in Windows 7, which I found under Accessories -> System Tools).

Open the Character Map utility, set the Font to 'Symbol' and you should see the 'Greater Than/Equal To' symbol 8 rows down and 7 columns over from the left. Once you find the character, highlight it, then push the 'Select' bottom near the bottom, then the 'Copy' button. Now go back to NX, open the Geometric Text function, again set the Font to 'Symbol' and then Paste the character into the Text entry field and you should be good to go.

That for 'Drafting' fonts. The original question was asking about 'model' or geometric text as in...

Insert -> Curve -> Text...
