Is anyone aware of a database (similar to IHS, Enverus, etc.) that allows one to search for wells/fields with a filter for API Gravity and/or Viscosity of produced oil?

Did you even try a search?

For US its a bit state by state, but even so.. https://www.eia.gov/dnav/pet/pet_crd_api_adc_mbblpd_m.htm

Of course API gravity in a field also changes with time.

I'm sure API will sell you the data as would other such bodies..... https://www.api.org/-/media/files/publications/2024-catalog/2024-data-products.pdf

Exxon are pretty open. Many basins have similar Crudes and don't vary hugely in between different fields. https://corporate.exxonmobil.com/what-we-do/energy-supply/crude-trading/crude-oil-assays

Loads to click on here..... https://aenert.com/technologies/fossil-fuel/unconventional-oil/interactive-map-of-heavy-oil-fields/

and a big table to investigate

Yeah dude, I tried a search. Thanks for the generic links but my question clearly asked for the ability to search by well or field.

I doubt even oil companies have it per well.

The raw data is there, now you just need to create a database....

What's this for? You probably need operators databases and they're not public.

1/ What regions?
2/ Being involved in oils assessment directly from local producers during last a couple of years I should warn you that there are few companies that know their every well/field produces as situation is changing constantly. Such data is available for trading purposes for oil blendes, but not for production ones.
