Pressure Switch (Pressostato)

We have an old hydraulic press. Please explain me how the pressure switch show on the pictures works
Brand: Fantini Cosmi
Type: B35G

It has 3 electrical contacts: C - NC and NO

I know that the contact switches once the pressure reach the set value, but what is the function of the red knob (A B C D F G)?

That is the differential setting. It sets the difference between when the unit switches on and when it switches off. It is used to prevent short-cycling, where a compressor or pump would constantly be switched on and off every few seconds.
