Greetings,
Are the typical pressure switches suited for all fluid pressure measurement applications? What I mean by this, is can I use the same pressure switch(as long as the process range is correctly specified for the process being measured) in application containing pressurized oil, air and pressurized water?

The device would be measuring the pressure, regardless of the process fluid.

You need to consider material compatibility between the process fluid and the wetted parts of the switch.

Is brass material typically used as process connection for low pressurized oil fluid?

The proper person to ask is the application engineer for a pressure switch manufacturer. It is their job to help you find the proper switch for your application.
 
The data sheet should specify what fluid the switch will tolerate. Often it's 'water/oil' sometimes 'air/water' but unless it's listed you will be inviting a problem.

If you simply can't find one rated for bee-drool or lava then there are gauge isolators that you can install between the gauge or sensor or switch and the fluid.
