what is the best type of pump to use when I want
to pump a foam-type substance?? and why?

your help is appreciated.

How much foam are you pumping? What is it used for? Where do you want to pump it from and where is it going? Foam is a tricky thing to move, but there are several ways to do it depending on the above quastions.

the foam is a lite yogurt (aerated). pumping a small
flow rate (<15 GPM). can you discuss the/any potential ways
of handling this tricky material.

Probably look at a sanitary grade lobe pump. They are low shear, which is probably important to your application. Also, the food grade ones are easily disassembled for frequent cleaning, which will be required.
 
Butleja is right. You can use sanitary lobe pump (they are commonly used in ointments, gels etc.)Or you can try out sanitary screw pumps too.
