Questions about Food Safe SS 304 vs. 201 1

We're developing a turkey pan, we have two options, one pan is 304SS the other is 201SS. The 201 is much cheaper to make the pan out of, my questions is what would be some performance differences in the two alloys? Is the 201 going to discolor or corrode quicker? What kind of issues could the customers run into with the 201 that they may not experience with the 304?

Is 201 approved for food use where you are?
It isn't in some countries.
The corrosion resistance of SS is based on the Cr content and the cleanliness of the steel.
So the 16% Cr of 201 will have lower corrosion resistance than the 18% of 304.

I believe 201 is NSF approved here in the united states
 
correction, It is generally recognized as safe for food contact however it may not be approved by NSF
