Rebuild existing structural brick wall (3 wythe)

I need to tell a contractor to rebuild an existing 200 year old brick bearing wall. What exactly do I need to say in my drawings? How specific should I get with repair instructions?

Right now I have:

Construction Sequence:
1) Take necessary precautions to block sidewalk from pedestrians while undertaking the following work.
2) yadda yadda - info about shoring roof
3) Carefully rebuild existing brick wall in (maximum) 3'-0" wide sections as necessary to restore structural integrity of wall.
