what type of gasket is recommended to use for water pipe line? water pressure 300 PSI. spiral wound metallic gasket vs EPDM rubber gasket?

Any more detail of the piping info, such as material, operation condition, etc.?
IMO, based on the piping material and/or flange joint type, the spiral wound gasket may go with the RF flange, as rubber gasket may be used in the FF flange.

Commonly used in industry. Check pressure-temperature ratings based on design conditions.

 
There are many 'paper' gaskets that suitable for water duty. But if there are water hammer events on your line spiral wound maybe better.
