I want to design a sheet metal trampoline for my daughter's goats. See the following link: Does anyone have experience is sheet metal design and can tell me how to proceed?

Go to Home Depot, get a sheet of 4'x8' plexiglass (1/8" thick maybe?), drill some holes in the ends and tie them together with rope - I bet it would be very similar to what you are seeing in the video you posted.
 
I'm not too sure about plexiglass. I have plexiglass mats on the carpet under my rolling chair. It gets brittle and breaks up after a while and has to be replaced. You might find the goats' feet punch through after a while.

I agree that the example is metal - there's a crease in it on the right side near the ground.
 
I think you would need spring making sheet metals like these Link
