Stability of O/W emulsion

Hello everyone,

Maybe somebody know why o/w emulsion with polyvinyl alcohol as emulsifier is not stable In acidic pH (after addition of HCl)?

And do you know some emulsifiers which I could use to prepare stable emulsion in acid solution ?

Secondary alcohols undergo a mix of Sn1 and Sn2 reactions when mixed with hydrohalic acids. Likely, the alcohol functional group is being replaced with the Cl- ion from the HCl. I don't know much about the commercial variety of emulsifiers, you probably need to talk with a specialty chemicals vendor and have them suggest options.
